For the Beginner Vegan


Becoming vegan is usually a decision that has to be made when the individual is fully committed and disciplined to such a drastic lifestyle change. The vegan experience is not only about food, it is about the mental and physical renewal of one’s being. The benefits of a vegan lifestyle are very rewarding but the journey can be challenging. It is recommended for those who are on the fence about fully committing to try a complete vegan lifestyle for a full month first. If the month goes well then that is a sign that you can handle the vegan lifestyle and should go for it. The first step to living a vegan lifestyle is to know and understand what foods you can and cannot eat. Once you understand what foods you should eat, decide which you would most enjoy and then make a grocery list. There are numerous recipes online for quick and easy vegan meals which can help you with your transition. Since this will be a totally new experience for you, keeping an open mind is extremely important. There are some foods that may take some time getting used to because of the taste, smell or even appearance, but having an open mind is almost half the battle. Majority of your time will be spent researching and reading food labels to ensure you are adhering to the rules of veganism. A lifestyle change can be somewhat overwhelming but one easy recipe to get started is the quinoa and black bean dish which is very simple and appetizing. To prepare this dish you will need…


1 chopped onion
3 crushed garlic cloves
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
Salt and pepper
1 teaspoon vegetable oil
½ cup cilantro
¾ cup quinoa
1 cup of corn kernels
2 cans black beans (drained)


-Heat oil in a saucepan over medium heat

-Sauté the onion and garlic until lightly browned.

-Mix the quinoa into the onion mixture and cover with vegetable broth

-Add the cumin, cayenne pepper, salt, and pepper and bring the mixture to a boil

-Simmer until quinoa is tender and broth is absorbed

-Stir the corn kernels into the saucepan and continue to simmer until heated through, about 5 minutes; mix in the black beans and cilantro.
