Grilled Chicken Pesto Panini


Put simply, people love sandwiches. The different types of sandwiches that people make and eat daily are quite numerous. One type of sandwich enjoyed by many is the Panini. Panini’s are grilled sandwiches which originated in Italy. Typically, Panini’s are made with cheese, ham, salami or other deli ingredients but have been adapted by people to include ingredients like chicken, fish or even pulled pork. Panini’s can be eaten anytime of day but many choose them as a lunch option. The grilled chicken pesto Panini recipe below delivers a delicious Panini that will definitely leave you satisfied, and you’ll make time and time again.

Here’s what you’ll need:

  • 1 medium chicken breast
  • 1 pinch of salt
  • 1 pinch of garlic powder
  • 1 pinch of onion powder
  • 1 pinch of paprika
  • 1 pinch of white pepper
  • 1 pinch of cayenne pepper
  • 1 pinch of dried oregano
  • 1 pinch of dried thyme
  • 4 tablespoons of prepared pesto sauce
  • 2 tablespoons of mayonnaise
  • 2 slices of French bread
  • 1/4 cup of pepper jack, shredded
  • 1 small tomato, sliced
  • 1 small onion, sliced
  • 1/4 of an avocado, chopped



  1. Add the salt, garlic powder, onion powder, paprika, white pepper, cayenne pepper, dried oregano and dried thyme to a bowl before adding 2 tablespoons of the pesto sauce and mixing together. After the contents of the bowl have been combined, coat the chicken breast with the mixture before leaving it in the bowl to marinate and placing the bowl in the refrigerator for 15 minutes.
  2. While the chicken breast is marinating, combine the remaining pesto sauce and mayonnaise in a small bowl and set the bowl aside.
  3. When the chicken breast has been marinated for 15 minutes, heat the Panini press after spraying with non-stick cooking spray. Grill the chicken breast for 5 minutes per side. Unplug the Panini press and remove the chicken breast and allow it to cool about for 5 minutes. After the chicken breast has cooled, cut the chicken into slices.
  4. Paste the pesto and mayonnaise mixture onto one side on both slices. Place the chicken on one slice of bread, pasted side facing upwards, before adding the sliced tomato and sliced onion. Add the shredded pepper jack before adding the avocado. Cover with the other slice of bread, pasted side face down. Reheat your Panini press and place the sandwich onto the press. Grill the Panini for 5 minutes before serving.
