Grilled Lemon Chicken


This recipe is one my Dad brought home from all those years working in the hotel industry. No matter where he went, they always asked him to prepare this dish in for the guests. And it was critically acclaimed and adored by all. It is super easy to make and so eloquent.

Here’s what you’ll need!

  •         2 tbsp. fresh lemon juice
  •         2 tbsp. coarsely chopped oregano
  •         1 tsp. ground thyme
  •         1 tbsp. ground cumin
  •         1 tbsp. chili flakes
  •         2 garlic cloves, pressed
  •         4 tbsp. chili flakes
  •         Salt and pepper to taste.
  •         1 tsp lemon zest
  •         3 chicken drumsticks

Here’s what to do

  1.   Whisk the first nine ingredients in a small bowl. Season to taste with freshly ground black pepper. Pour the marinade into a plastic bag (zip lock or with a seal), add chicken and close. Turn bag to coat chicken. Marinate at room temperature for 30 minutes or in refrigerator for up to 2 days turning occasionally.
  2.   Prepare barbecue the heat should be medium-high heat. Place chicken on grill rack, grill chicken until cooked through and golden brown on all sides, turning frequently about 30 minutes Transfer to plate and serve.
