Lamb Curry on Chow Mein

Ingredients

1 ½ Lamb (cut into cubes)              1 Onion
2 Tbsp. Olive oil                                 2 Cloves of Garlic
3 Potatoes                                            1 Tbsp. Brown Sugar
2 Tbsp. Curry powder                        1 Sweet pepper (chopped)
1 Can of Diced Tomatoes in juice

Directions

  1. Finely chop the onion and garlic. Wash and peel the potatoes and cut them into small cubes. Heat the olive oil in a medium sized pot and add the onions and garlic. Stir fry the onions and garlic for a few minutes and then add in the lamb with the brown sugar.
  1. Cook the lamb until it starts to brown and then add in 4 cups of water, curry powder, salt and pepper. Let the lamb cook until it starts to get tender and then add in the potatoes and sweet peppers. Lower the heat on the stove and let the potatoes cook for about 20 minutes. Each 5 – 10 min intervals add in a little water and stir the curry to prevent it from getting too thick.
  1. For the final stir, loosen the curry up by stirring in the can of tomatoes in place of water.
