Lemon Bars


Lemon bars are a derivative from dessert bars or squares. They are a type of American “bar cookie” that takes the texture of a firm cake or softer than usual cookie.  They come in a variety of different flavours like coconut bar, newly invented lime bar and a Nanaimo bar.

Here’s what you’ll need

  • 1 cup butter
  • ½ cup white sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 ½ cups white sugar
  • ¼ cup all purpose flour
  • 2 lemons juiced
  • 2 tablespoons of lemon zest

Follow these directions

  1. Preheat oven to 350 degrees
  2. In a medium bowl, blend together butter, 2 cups flour and ½ cup sugar. Press into the bottom of an ungreased 9 x 13 inch pan
  3. Bake for 20 minutes in the preheated oven until firm and golden brown. In another bowl, whisk together the remaining 1½ cups sugar and ¼ cup flour. Whisk in the eggs and lemon juice and lemon zest and pour over baked crust.
  4. Bake for an additional 20 minutes. The bars will firm up as they cool. Cut into 2 inch squares and serve!
