Mussels in Red Sauce

For a light yet hearty meal that requires very little effort, mussels are a great option. Mussels are usually paired with pastas or rice dishes but they are also enjoyable on their own. There are just a few simple steps when preparing mussels and the process only takes a few minutes. This recipe is a simple mussel and red sauce paired with French bread. To prepare this meal for one, you will need…

1 lb mussels
4 tablespoons butter
1 tablespoon garlic minced
2 tablespoons lime juice
1 can tomato sauce
1 tablespoon Italian seasoning
½ teaspoon red pepper flakes
1 cup chopped green onions

-Scrub and remove the beards from each mussel and set them aside

-Melt butter in a skillet over medium heat and add the olive oil into melted butter.

-Sauté the garlic in the oil and butter for about 5 minutes

-Add the tomato sauce, Italian seasoning, and red pepper flakes and stir thoroughly

-Reduce heat to low and simmer for 10 minutes

-Add the mussels to the pan and cover it tightly

-Raise the heat to medium-high and cook until all mussels have opened for about 10 minutes

-Discard any unopened mussels.

-Remove from heat and garnish with chopped green onions

-Cut a loaf of French bread into a few pieces for dipping and serve

Depending on your mood a glass of wine may be perfect for this delicious dish.
