Perfect Paella


Paella (pronounced pah-ay-yah) is the perfect one pot meal bursting with an abundance of flavors. Paella is a Spanish dish which contains rice, chicken, vegetables and seafood. 2 cups cooked white rice
3 cloves garlic
¼ teaspoon saffron
1 quart chicken stock
½ teaspoon crushed red pepper
1 bay leaf
Fresh thyme
2 lbs chicken tenders cut into quarters
1 chopped onion
½ lb chorizo sausage chopped
1 lb cleaned shrimp
½ lb scallops
1 cup frozen peas
12 cleaned mussels
2 zest lemons
3 tablespoons olive oil


-In a large pan, preheat olive oil and add the white rice, crushed red pepper and crushed garlic and sauté

-Add the chicken stock, bay leaf, saffron and thyme and allow simmering

-In a separate skillet, cook the chicken until brown, add onions and the chorizo sausage and cook for 3 minutes

-After 15 minutes, add the seafood to the pan with the rice, add peas and lemon zest and cook for 2 minutes

-Add the cooked chicken and chorizo to the pan and mix all the ingredients together

-Once the dish is settled, serve with lemon wedges and bread
