Strawberry shortcake is an absolutely delightful dessert and perfect for one. There are two options when making strawberry shortcake which are using fresh strawberries or preservatives. Going the fresh route is always better because the taste is more authentic. The option of using a sweet cake or biscuit is important also, and for this recipe since it’s a single serving we will go with a very small shortcake. Ingredients

1 ½ lb strawberries washed and stemmed
5 tablespoons sugar
2 cups flour
2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoons salt
1 ½ cups heavy cream

Instructions

Mix strawberries with 3 tablespoons of sugar and let them sit in the fridge while the juices develop

-Preheat the oven to 350-400 degrees

-Add together the baking powder, flour, baking soda, remaining sugar and salt into a mixing bowl

-Add the heavy cream and mix until all ingredients are fully mixed

-Spoon the mixture into a small baking pan and bake for 20 minutes

-When the shortcake is completed, remove from the pan and place to cool

-Cut the shortcake into four pieces and split horizontally

-Spoon some the strawberries along with the juice onto the bottom layers of the split shortcake

-Top with some ready whip whipped cream and then add the shortcake top

-Spoon some more strawberries over the top and around the plate and serve

This simple dessert recipe is perfect because it is not too sweet or not too bland and more than enough for seconds.
