Stuffed Baked Potato


Potatoes are one of those fun vegetables that you can do just about anything with. The options are endless when it comes to cooking potatoes and not to mention the flavours. One popular way people like to eat potatoes are when they are baked. Others take it a bit further with the baked potatoes and proceed to stuff them. This interesting way in preparing potatoes is fun and delicious and can get very creative. The original baked potato recipe goes a little like this…


1 large baking potato
1 tablespoon chopped chives
3 slices cooked bacon cooked and chopped finely
1 cup of grated cheddar cheese
1 Stick butter
1 tablespoon milk
Sprinkle of salt and pepper
A dollop of sour cream


-Preheat the oven to 350 degrees

-Thoroughly scrub and rinse the potato until the excess dirt is off

-Pierce the potato with a few holes to allow heat to cook the potato thoroughly

-Bake for 45 minutes to an hour

-Cut the potato in half and scoop the centers out

-Add butter, milk, salt and pepper to the potatoes and mash them until creamy

-Add some of the bacon and chives and stir

-Spoon the mashed potatoes back into the empty shells and top with the remaining bacon, chives and cheese

-Bake again for 5 minutes until the cheese is melted

-Top with a dollop of sour cream and enjoy


This stuffed baked potato can be enjoyed with a meat entree or by itself.
